Instructions
 

Preparation

  • Start by gathering your ingredients. Preheat your oven and prepare your baking sheet by lining it with parchment paper.
  • In a medium bowl, combine the all-purpose flour, instant espresso powder, baking powder, baking soda, and salt. Whisk these dry ingredients together until they are well blended.
  • In a large mixing bowl, use an electric mixer to cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the egg and vanilla extract to the butter-sugar mixture, beating until fully incorporated.

Mixing

  • Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until no dry flour remains.
  • In another bowl, whip the mascarpone cheese until creamy. Fold in the whipping cream and powdered sugar until smooth.

Baking

  • Scoop portions of the cookie dough onto the prepared baking sheet, leaving space between each scoop.
  • Bake the cookies and allow them to cool on the baking sheet briefly before transferring them to a wire rack.

Assembly

  • Spread a generous amount of the mascarpone filling on the flat side of one cookie and sandwich another cookie on top.
  • Dust the assembled cookies with cocoa powder before serving.

Notes

Store the cookies at room temperature in an airtight container for up to three days. For longer storage, refrigerate for up to a week or freeze unfilled cookies for up to a month.
