Instructions
 

Preparation

  • Start by taking the cold unsalted butter and cut it into small pieces. Place it into a large mixing bowl.
  • Add the room-temperature Libby's Pumpkin Puree to the bowl with the cold butter and mix until smooth.
  • Introduce the granulated sugar and light brown sugar and mix until light and fluffy.
  • Add the large egg yolks and vanilla extract and mix until well incorporated.
  • In a separate bowl, whisk together the all-purpose flour, pumpkin spice, baking soda, and fine sea salt.
  • Gradually add the dry mixture to the wet ingredients in batches, mixing it slowly.
  • Fold in the finely chopped chocolate bar or chocolate chips until evenly distributed.
  • Preheat your oven to the appropriate temperature. Line a baking sheet with parchment paper.
  • Scoop the cookie dough onto the prepared baking sheet, leaving enough space between each scoop.
  • Bake the cookies until lightly golden around the edges, then cool on a wire rack.
