  • Gather all your ingredients and equipment. Ensure your butter is softened.
  • In a large mixing bowl, combine the softened unsalted butter with the granulated sugar and brown sugar. Mix until smooth and creamy.
  • Add the vegetable oil to the sugar mixture and stir until fully combined.
  • Crack the egg into the mixture and add the vanilla extract. Mix until well blended.
  • Sprinkle the baking soda and salt over the wet ingredients. Stir well to incorporate.
  • Gradually add the quick-cooking oats and mix until just combined.

Dough Mixing

  • Begin incorporating the all-purpose flour into the mixture, mixing until nearly combined without overmixing.
  • Fold in the sweetened shredded coconut and lightly crushed cornflakes.

Baking
