  • 2 large eggs room temp, for binding and structure
  • 3/4 cup white granulated sugar adds sweetness
  • 1 tsp vanilla extract enhances overall flavor
  • 1/4 cup Dutch-process cocoa powder contributes to chocolate flavor
  • 3/4 cup unbleached all-purpose flour provides structure
  • 1/2 tsp salt balances sweetness
  • 5-10 pieces fresh strawberries sliced for topping and freshness
  • 1/3 cup semi-sweet chocolate chips for melting drizzle
  • 1-2 tsp olive oil to help melt chocolate chips

Instructions
 

Preparation

  • Begin by placing the chopped strawberries in a saucepan with the tablespoon of water. Cook over low heat until softened and syrupy.
  • Remove from heat and let cool. Melt 1 cup of semi-sweet chocolate chips with olive oil until creamy.
  • Whisk eggs in a bowl, gradually add granulated sugar while whisking until combined and thickened.
  • Stir in vanilla extract and the melted chocolate mixture until well combined.
  • In a separate bowl, sift together cocoa, flour, and salt. Gradually fold into wet ingredients until just combined.
  • Fold in the softened strawberries gently.
  • Preheat oven and prepare an 8x8-inch baking pan by greasing or lining with parchment.
  • Pour brownie mixture into the pan and smooth the top. Press sliced strawberries into the top.

Baking

  • Bake until set but moist in the center, about 25 minutes.
  • Let cool completely before drizzling melted chocolate on top.
  • Slice into squares and serve.

Notes

Store brownies at room temperature for a couple of days or in the refrigerator for about a week. For longer storage, freeze for up to three months.
