Preparation

  • Begin by melting the butter and peanut butter together in a medium saucepan over low heat.
  • Stir gently until both are entirely combined and smooth, watching for slight bubbling.
  • Remove the saucepan from heat and add the honey, salt, sourdough discard, vanilla, and brown sugar.
  • Stir everything together until the mixture is smooth and cohesive.
  • In a separate mixing bowl, combine the rolled oats with the chocolate chips and chopped peanuts.
  • Pour the wet mixture from the saucepan into the bowl with the dry ingredients.
  • Stir well until everything is evenly coated and there are no dry oats visible.
  • Prepare a baking dish by lining it with parchment paper or greasing it lightly.
  • Transfer the granola mixture into the dish and press it firmly into the corners and flatten the top.
  • Allow the granola bars to cool completely in the dish at room temperature for about one hour.

Notes

Press the granola mixture firmly into the dish for compact bars. Use a sharp knife to cut after they've cooled. Store in an airtight container to keep fresh. Experiment with mix-ins, such as dried fruits or seeds.
