Preparation

  • Gather your ingredients and combine the almonds, pumpkin seeds, sunflower seeds, coconut flakes, salt, and cinnamon in a mixing bowl. Stir until well combined.
  • In a separate small bowl, whisk together the vanilla extract, honey, and melted coconut oil until fully integrated.
  • Pour the wet mixture into the bowl with the dry ingredients and mix everything together until the dry ingredients are evenly coated.
  • Line a baking dish with parchment paper and transfer the mixture into the dish. Press it down firmly to create an even layer.
  • Let the mixture sit at room temperature for about 30 minutes to firm up. Refrigerating will yield an even firmer texture.
  • Once set, lift the mixture out of the dish using the parchment paper and place it on a cutting board. Cut into desired bar sizes.
  • The nut and seed bars are ready to enjoy! Store leftovers in an airtight container.

Press firmly to ensure the mixture holds together. Use fresh ingredients for the best flavor. Experiment with spices and adjust sweetness to taste before pressing into the dish. Store in an airtight container at room temperature for up to a week or refrigerate for up to two weeks.
