Preparation

  • Prepare the brownie mix according to the box instructions, combining the mix with water, oil, and eggs in a mixing bowl.
  • Stir until fully blended to a smooth consistency without lumps, then pour into a greased baking dish.
  • Bake the brownies until a toothpick inserted in the center comes out clean, ensuring they have the right texture.
  • Let the brownies cool completely in the baking dish on a wire rack.

Mint Chip Layer

  • Scoop the mint chip ice cream into a mixing bowl and allow it to soften slightly.
  • Gently fold the ice cream with a spatula until it reaches a smooth, spreadable consistency.
  • Spread the softened mint chip ice cream evenly over the cooled brownie base.
  • Freeze for about an hour to firm up the ice cream layer.
