Main Ingredients

  • 2.5 cups old-fashioned oats Provides structure and chewiness.
  • 0.5 cup coarsely chopped nuts (cashews, almonds, walnuts, pecans, macadamia nuts, peanuts) Adds crunch and flavor.
  • 1/3 cup honey Acts as a binding agent and sweetener.
  • 4 tablespoons unsalted butter Adds richness and moisture.
  • 1/4 cup brown sugar Contributes sweetness and a touch of caramel flavor.
  • 1/4 teaspoon kosher salt Balances sweetness.
  • 1 teaspoon vanilla extract Enhances overall flavor.

Mix-ins

  • 3/4 to 1 cup miniature chocolate chips, toasted coconut flakes, dried cranberries, miniature M&Ms, chopped Oreos, white chocolate chips, dried blueberries, dried apples, dried apricots, caramel bits, Rice Krispies, dried pineapple, dried mango, seeds (pumpkin, chia, sunflower, hemp, flax) Adds variety and personal touch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a baking dish with parchment paper, leaving overhang on the sides.
  • In a mixing bowl, combine oats and chopped nuts, stirring them together.
  • Melt butter in a small saucepan over low heat, then add honey, brown sugar, and kosher salt. Stir until combined.
  • Remove from heat and stir in vanilla extract.
  • Pour the melted mixture over the oat and nut mix, stirring together until evenly coated.
  • Gently fold in your choice of mix-ins.
  • Transfer the mixture to the prepared baking dish and press down firmly.

Baking

  • Bake for about 20 to 25 minutes until edges are golden brown.
  • Once baked, remove from oven and cool completely in the dish.
  • Using the parchment overhang, lift the bars out and cut into squares or rectangles.

Storage

  • Store in an airtight container at room temperature for up to a week or in the fridge for up to two weeks.

Notes

Pack the mixture tightly for better adhesion. Experiment with different mix-ins. Allow bars to cool completely before cutting for the best results.
