Brownie Base

  • 1 large sweet potato, about 1 cup mashed (about 200g) Adds moisture and sweetness

  • 1/3 cup pure maple syrup or honey Adds sweetness and moisture
  • 1/4 cup unsweetened cocoa powder Provides chocolate flavor
  • 1/2 cup flour (or almond flour for a gluten-free option) Adds structure
  • 1 tsp vanilla extract Enhances flavor
  • 1/2 tsp baking powder Helps brownies rise
  • 1/4 tsp salt Balances sweetness
  • 1/3 cup dark chocolate chips or chopped nuts (optional) Adds richness and texture

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare your baking pan by greasing it lightly or lining it with parchment paper.
  • Wash the sweet potato, pierce the skin with a fork, and bake until tender. Let cool, then peel and mash until smooth.

Mixing

  • Combine the mashed sweet potato and almond butter in a mixing bowl and mix until creamy.
  • Add the pure maple syrup (or honey) and vanilla extract, mixing until well incorporated.
  • Gradually sift in the cocoa powder, flour, baking powder, and salt, folding until just combined.
  • If using, fold in the chocolate chips or chopped nuts.

Baking

  • Pour the brownie batter into the prepared baking pan, spreading it evenly.
  • Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

These brownies can be enjoyed for breakfast, as a snack, or at gatherings. They can be stored at room temperature for a couple of days, in the fridge for about a week, or frozen for up to three months.
