Preparation

  • In a mixing bowl, combine the creamy natural peanut butter and the first 2 tablespoons of maple syrup. Stir them together until the mixture is smooth and well-blended.
  • Add the ground flaxseed and water to the peanut butter mixture. Combine them thoroughly, ensuring a uniform consistency.
  • In another bowl, melt the vegan stick butter. Add the dark chocolate chunks to this melted butter while it’s still warm, allowing them to melt slightly.
  • Incorporate the light brown sugar into the chocolate-butter mixture. Stir until the sugar is fully dissolved.
  • Mix in the remaining 1/4 cup of maple syrup and the vanilla extract until everything is smooth.
  • Gradually sift in the all-purpose flour, baking powder, baking soda, cocoa powder, and salt. Fold the dry ingredients into the wet ingredients carefully.
  • Finally, fold in your dark chocolate chunks or disks.
  • Pour the batter into a prepared baking dish or lined with parchment paper, smoothing the top with a spatula.
