  • In a mixing bowl, combine the powdered sugar and meringue powder. Whisk until evenly blended, breaking up any clumps.

  • If using vanilla extract, add it to the mixture and whisk until well incorporated.
  • Add gel food coloring if desired and mix until you achieve your preferred color.
  • Transfer the icing into piping bags or a zip-top bag with a corner snipped off for decorating.
  • Decorate your sugar cookies as desired, and allow the icing to set at room temperature until dry.

Notes

If the icing is too thick, add more water gradually. Work quickly when decorating as the icing sets while drying. Consider making small batches in different colors for variety.
