  • ¾ cup raw sunflower seeds, roughly chopped adds crunch and nutrition

Preparation

  • Start by gathering your ingredients in a mixing bowl. If you’re using dry fruit, chop it into smaller pieces.
  • In the same bowl, combine the chopped sunflower seeds, chopped almonds, shredded coconut, pumpkin seeds, ground flaxseed, chia seeds, and sea salt. Stir these dry ingredients together until they are evenly mixed.
  • In a separate bowl, combine the almond butter, coconut oil or butter, honey, and vanilla extract. Stir until you have a smooth and creamy mixture.
  • Pour the creamy mixture into the bowl with the dry ingredients. Use a spatula or spoon to mix everything together thoroughly.
  • Add in the dried fruit or dark chocolate chips and gently fold them into the mixture.
  • Line an 8×8 inch baking dish with parchment paper, and transfer the mixture into the dish. Press it down firmly to create an even layer.
  • Place the baking dish in the refrigerator for about 30 minutes to an hour. Once chilled, remove the tray and lift the granola mixture out using the edges of the parchment paper.
  • Cut into bars of your desired size and store in an airtight container.

Notes

Store the cut bars in an airtight container. They can be kept at room temperature for a few days or refrigerated to prolong freshness.
