Ingredients
  

For the cookie dough

  • 1/2 cup unsalted butter (softened) Ensure it's softened to achieve light and fluffy texture.
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar (packed)
  • 1 large egg Make sure to mix until fully incorporated.
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

For the crumb topping

  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons butter (melted) Melted for mixing.

For the glaze

  • 1/2 cup powdered sugar
  • 1–2 teaspoons milk or cream Adjust to achieve desired consistency.
  • splash of vanilla extract For extra flavor in the glaze.

Instructions
 

Preparation

  • Cream together the softened unsalted butter, granulated sugar, and packed brown sugar in a mixing bowl until light and fluffy.
  • Add the large egg and vanilla extract to the mixture, blending well until combined.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  • Gradually incorporate the dry ingredients into the wet mixture until just combined. Do not overmix.
  • Combine the additional flour, packed brown sugar, and cinnamon in a small bowl for the crumb topping. Stir in the melted butter until resembling coarse crumbs.

Baking

  • Preheat your oven.
  • Using a cookie scoop or spoon, place rounded tablespoons of dough on a lined baking sheet.
  • Sprinkle the crumb topping generously over each cookie dough mound.
  • Bake until lightly golden around the edges, and still soft in the center.
  • Allow cookies to cool on the baking sheet briefly before transferring to a wire rack.

Glazing

  • Mix powdered sugar with milk or cream and a splash of vanilla extract to create a glaze. Drizzle over cooled cookies.

Notes

These cookies can be served warm for breakfast or as a delightful afternoon snack. Leftovers store well in an airtight container.
