  • 1 teaspoon vanilla extract for warmth and sweetness
  • 1/4 cup miniature chocolate chips adds sweetness and texture

Preparation

  • Start by preparing your baking dish. Grease the dish lightly with butter or use parchment paper to ensure easy removal of the granola bars later.
  • In a mixing bowl, combine rolled oats and crispy rice cereal. Stir gently to ensure an even mix.
  • In a small saucepan on low heat, melt the unsalted butter. Stir in the dark brown sugar until completely dissolved.
  • Remove the saucepan from heat and add honey, sourdough discard, salt, and vanilla extract into the melted mixture. Stir thoroughly until everything is well combined.
  • Pour the wet mixture into the bowl with the oat and cereal mixture. Mix using a rubber spatula or spoon until all the dry ingredients are coated.
  • Gently fold in the miniature chocolate chips.
  • Transfer the mixture into the prepared baking dish. Press the mixture down firmly and evenly to create a compact layer.
  • Allow the mixture to cool completely at room temperature before slicing into bars.

Notes

Make sure to pack the mixture tightly in the baking dish for them to hold together. Store in an airtight container at room temperature or refrigerate for up to a week.
