Preparation

  • In a mixing bowl, combine the creamy peanut butter and honey. Stir until well-blended and smooth.
  • Add the coconut oil and mix until all components are well combined.
  • Incorporate the salt and vanilla extract, stirring until distributed.
  • Add the dry chia seeds and ground flax seed, mixing until evenly distributed.
  • Gradually fold in the quick oats until well-coated and no dry spots remain.
  • Fold in the chopped walnuts gently until evenly mixed.

Baking

  • Press the mixture firmly into a prepared baking dish, spreading it evenly.
  • Allow to cool completely at room temperature to help the bars set.
  • Once cooled, cut into desired sizes using a sharp knife.
  • Store in an airtight container at room temperature or in the refrigerator.

Notes

For best results, ensure all ingredients are at room temperature and compact the mixture tightly in the baking dish. Experiment with flavors like chocolate chips or different nut butters.
