  • 2 scoops collagen protein (~20g) sub protein powder of choice to increase protein content
  • 1/4 tsp. kosher salt enhances overall flavor

Mix-Ins

  • 1/2 cup chocolate chips sub cacao nibs or dried fruit for vegan option
  • 1/4 cup finely chopped walnuts optional, provides crunch if included

Instructions
 

Preparation

  • Preheat your oven to a moderate temperature. Prepare your baking dish by greasing it lightly or lining it with parchment paper.
  • In a large mixing bowl, mash the two ripe bananas until they’re smooth.

Mixing Wet Ingredients

  • Add the creamy peanut butter, melted coconut oil, pure maple syrup, and vanilla extract to the mashed bananas. Stir until well combined.

Mixing Dry Ingredients

  • In another bowl, mix together the rolled oats, collagen protein, and kosher salt.

Combining Mixtures

  • Gradually fold the dry mixture into the wet ingredients using a spatula.
  • Next, fold in the chocolate chips and walnuts, if using.

Baking

  • Transfer the mixture to your prepared baking dish and spread evenly.
  • Bake until golden brown and firm to the touch, keeping an eye on them to avoid overbaking.

Notes

For extra flavor, lightly toast walnuts before adding. Ensure bananas are ripe for maximum sweetness. Allow bars to cool completely before cutting.
