Ingredients

  • 1 cup sourdough starter (discard or active)
  • 2 cups rolled oats (for chewy texture)
  • 1/2 cup honey or maple syrup (for sweetness and moisture)
  • 1/4 cup melted coconut oil or butter (for richness and binding)

Add-ins

  • 1/2 cup nuts (e.g., almonds, walnuts, or pecans), roughly chopped (for crunch)
  • 1/2 cup seeds (e.g., chia seeds, flaxseeds, or pumpkin seeds) (for added nutrition)
  • 1/2 cup dried fruit (e.g., raisins, cranberries, or apricots), chopped (for sweetness and chew)
  • 1 teaspoon vanilla extract (for flavor)
  • 1/2 teaspoon salt (to enhance flavors)
  • 1/2 teaspoon cinnamon (optional, for warmth)

Instructions
 

Preparation

  • In a mixing bowl, start by combining the sourdough starter with the rolled oats and mix until well integrated.
  • Add in the honey or maple syrup and stir until it coats the oats and starter mixture evenly.
  • Pour in the melted coconut oil or butter and mix well until fully combined.
  • Incorporate the roughly chopped nuts into the mixture and gently fold them in.
  • Add the seeds and chopped dried fruit, mixing them in well.
  • Add the vanilla extract, salt, and optional cinnamon to the mix and stir until uniform.
  • Preheat your oven and prepare a baking dish by lining it with parchment paper.
  • Transfer the granola mixture into the baking dish, spreading it out evenly and pressing it down firmly.

Baking

  • Place the baking dish in the oven and bake until the edges start to turn golden brown and the center feels firm.
  • Remove the baking dish from the oven and allow the mixture to cool completely in the dish.
  • Once cooled, cut the mixture into bars of your desired size.

Notes

To store, keep your baked sourdough granola bars in an airtight container at room temperature for up to a week or refrigerate for longer freshness.
